CHABLIS
Burgundy’s northernmost AOC, Chablis’ wines are characterized by high acidity, pronounced minerality, and a vibrant profile of tart, green fruit. The region’s winemaking focus is largely on using Chardonnay as a vehicle to showcase the area’s unique terroir, a mix of marlstone and limestone with calcified bivalve shells. Chablis’ wines are almost always un-oaked, but some Premier Cru and Grand Cru styles use sparing amounts to offer a more sophisticated and elegant expression of their best vineyards.
